100ml of white wine
tin of tuna (although i use 2)
tin of toms
jar of red pesto
pasta
cheese

Boil toms and wine then simmer for 5, until wine boils off. Add pesto, then tuna(drained). Simmer for further 5 mins
Meanwhile cook pasta for 10 mins (300g for 4 people)
mix together when pasta cooked, add to ovenproof dish and cover with cheese (I use grated cheddar and mozzarella if I have it)
Cook in oven for 10 mins till cheese bubbles.

It's my "I've got nothing left in the house" meal

Pasta puttanesca - Delia Smith's recipe, but I use tinned tomatoes.

Risotto is always do-able with whatever is lurking in the fridge or using frozen peas. I won't bore you with how to make it.
I make pasta sauce with tinned tomatoes and puree, onion, splash of balsamic, mixed/Italian herbs and some tinned lentils for a bit of protein.
Jacket spud with whatever tinned stuff you have -baked beans, tuna, or cheese etc

Frittata here.... A few eggs beaten with some cooked, diced potato, a chopped tomato, a chilli-pepper, a spring onion, maybe spinach or peppers if I have them, seasoning ... slipped into an omelette pan then sprinkled with a sneeze of cheese and finished off under the grill.

Rice and red lentil dahl (sp?) with some kind of vegetable curry alongside if I've got time/ingredients. Definitely our fall back 'can't think what to cook' meal.

Second favourite would have to be sosmix 'meatballs' in tomato sauce with either spaghetti or mash depending on how short of time we are.

Chickpea and chorizo stew. All you need to buy fresh is the spinach.

For two generous servings:

Cooking chorizo
Medium onion, finely chopped
2 cloves garlic, crushed
Can of chick peas rinsed and drained
Can of chopped tomatoes
bay leaves, dried herbs, seasonings
Bag of spinach, baby leaf if possible
Parmesan

Slice cooking chorizo into thick slices (thickness of a pound coin) do whatever you think looks reasonable for two people.

Fry gently in a large casserole dish on the hob til browning on both sides. Remove from casserole and set aside. Gently fry onion in the chorizo-y oil in the casserole until going transparent (about 10 mins) add garlic and fry for a few minutes more.

Add tomatoes, chick peas, chorizo, 2-3 bayleaves, a tsp sugar, black pepper and dried herbs like oregano or basil. Add a cupful of white wine or vegetable stock.

Put lid on pan and cook v gently for about 45 minutes.

Wash spinach. While still wet put spinach on top of stew and return lid to pan. Serve it up as soon as spinach wilted, while still bright green.

Serve on rice, topped with parmesan.

Risotto and puttanesca here, too. Also spaghetti alle vongole from tinned clams, and I always have parsley in the freezer. And spaghetti carbonara if we truly have nothing.

I do puttanesca too but with lazy garlic, dries oregano and tinned everything else. It is one of our favourites.

This butterbean and feta recipe is a pretty good standby. I substitute leeks for the spring onion and baby spinach for the sorrel. If you have a large frying pan, you can do it in one batch which cuts down the cooking time - I cook the leeks finely cut for a couple of minutes, then add the butter beans (use tinned).
It reheats well and is tasty when warm and with crusty bread.
Guess what I'm having for dinner :)

potato wedge frittata - cook wedges then make them into a frittata with 1/2doz eggs, box cherry toms, an onion and some cheese.

easy minestrone made with a bag of frozen mixed veg, tinned toms, pasta, garlic and some parmesan for on top. Have it with garlic bread.

chick pea curry made with dried chick peas, frozen spinach, potatoes, onion, tinned toms and curry powder

white bean and pasta soup - dried white beans or chick peas, cooked then simmered in stock with onions and a lot of garlic. Blitz until half smooth, add pasta and cook for another 10 minutes or so.

dried tortellini cooked in beef stock with onion, celery, carrots and garlic - pasta soup.

tomato rice with cheese - rice cooked with onion, tinned toms and seasonings served with grated cheese no top and tortilla wraps on the side.

salmon fritters - cook a packet of noodles, Stir in a tin of pink salmon, a tin of corn, 2 eggs, a cup of flour and enough milk to make a batter. Fry by tablespoonfuls.

lentil and tomato soup
tuna pasta
spinach and butter bean soup using tinned/dried butter beans, frozen leeks and spinach and chopped garlic.

barley broth using pearl barley, stock and frozen soup veg.

bean chilli using dried/tinned beans, tinned toms, onions, spices. Serve on toasted cheese.

honeyed lentils
lentil stew
lentil and potato curry
eggy rice
sesame and soy noodles with peas and onion

We all have different favourites in here, so I can't pick just one.

Pizza (dough from the breadmaker topped with leftovers - everything goes on pizza!)

Stir-fry veg/meat with garlic and ginger and chillies if you have them. Sauces made from vinegar and honey and tomato puree (sweet and sour), or soy sauce and peanut butter (satayish) mixed separately and stirred through to coat.

Pasta with leftovers - fry meat and veg (e.g. onions/leeks/spring onions with mushrooms/peppers/tomatoes/beans - whatever hasn't been eaten yet! Sauces either from stiring in soft cheese (philadelphia usually) or tinned tomatoes. A nice addition is breadcrumbs with some parmesan and pine nuts or pesto toasted in the oven.

Jambalaya.

fry chopped onion in olive oil, add finely chopped chorizo, chilli peppers, garlic and bacon. When cooked, add loads of Cajun spices. Add dry rice and fry so it soaks up the flavoured oil. Add chicken stock, peas and chicken and or prawns, red pepper and peas. Simmer until rice is cooked, or place in oven.
