Best buffet dish.

Going to a party and everyone needs to bring a dish. Has to be finger or fork friendly as we will probably be standing or sitting on the floor to eat as my friends house is smallish.

Ideas needed for something interesting rather than the usual quiche, pizza type things.

Spanish tortilla. Very simple, not expensive, but so delicious.

Chop up your peeled potatoes (I do them in quarters and then slice the quarters). Then chop up your onions (half and then just sliced). I do about 2 big potatoes and two big onions. One clove of garlic, sliced. Put them all in a non-stick frying pan (must be seriously non stick) with plenty and I mean plenty of olive oil - it's part of the flavour. Fry gently for about 15 or 20 mins til the potatoes are soft. You don't necessarily want them browned. In fact you are almost cooking them confit (gently simmered in oil). Whisk up 5 eggs and season generously with salt and pepper. Add the hot onions and potatoes into the eggs with a slotted spoon, keeping the oil in the frying pan. Stir the onions and potato into the eggs. Put the pan back on the heat and get the oil hot. Pour the eggs into the pan - the edges should bubble up. Using a spoon coax the edges down and in and then turn down the heat to medium. When it's cooked to the point where only the top is still a little liquid carefuly pour off some of the excess oil and then put a board (bigger than the pan) over the the pan. Take a leap of faith, hold on tight and flip the whole thing over. Then slide the tortilla back in the pan to cook the other side. Don't cook it for too long as the idea is to have the middle just set. Cool and cut into small squares. Lovely with a dollop of garlic mayo. Can also add chorizo or peppers for more interest.

Buy/make small yorkshire puds, put some roast beef in them with a spoonful of a 50/50 mayo & horseradish mixture.

If poss warm the y pud and beef and then put the horseradish on but if not they still taste good at room temperature.
