Can I freeze spinach risotto?

Has 50g of cheese in the recipe would this be a problem? If so I guess I could add after reheating?

I don't see why not - as long as none of the ingredients have already been frozen. NB I also freeze cheese (on it's own) with no issues!

I have frozen risotto but it's never as nice as freshly cooked.

You might need to add a bit of liquid when you reheat.

It might be better made into risotto balls or patties rather than freezing if you want to use it up. Or make when defrosted if texture is not as nice for normal risotto. Just add some beaten egg to rice mixture to make it a bit sticky & shape into little balls or patty shapes, press a blob of mozarella in the middle of the balls if you fancy, then coat in breadcrumbs & fry until heated through properly. I think the proper Italian name is arancini.

Thanks for all your replies pleased because I want to make or today. I just wanted to use a bag of spinach that is near the end of it's life and saw the recipe and have all the other ingredients

Can't believe you freeze cheese lulie! I've got it in to my head that you can't freeze dairy but obviously not so.

And thanks for your recipe elvisgirl sounds delicious! Will def try that for DD-sounds like perfect BLW food. Thanks all

my mum has frozen cheese before and always freezes milk. she gets 2 big bottles a week and always freezes one. has always been ok but i have never been aware that you maybe shouldnt freeze it. dairy is the one thing im ansy about when its out of date though or if i think its been open a long time.
