Cheapish salmon recipes, impossible?

DH and I are trying to eat more fatty fish as part of a health drive, this is problematic as he loves most types of fatty fish, but I'm a lot more picky. We can agree on salmon, but it seems so expensive and we're on a budget, any good relatively cheap recipes would be much appreciated Smile

I get 5/6 pieces of frozen pacific salmon for 5 euros at the local supermarket. Each piece is enough for one person.

Sainsbury's do a pack of 4 salmon fillets for about £2.50 if that helps

the rainbow trout in waitrose.... tastes similar to salmon but cheaper.

Tesco quite regularly has whole salmon or salmon sides at half price on the fish counter - a whole salmon would then be about £16. I get them to skin and fillet them to freeze and use over the next few weeks.

Also, how about tinned salmon instead? I make a pasta bake using this mixed with 1/2 tub of passatta, a tub of cottage cheese blitzed smooth and some grated mozzarella. Bake in the oven for about 20 mins and it thickens up nicely.

I get a big value bag of salmon from Asda with several fillets (I think last bag had eight in it) for just under a tenner. It stays in the freezer and they are individually wrapped, all I have to do is snip off a corner and microwave steam it in three minutes. Dead handy!

sainsburys meal planner with the 5 meals for £19.99 thing had a salmon and courgette pasta dish using the salmon flakes / trimmings. It was very easy but my lot decided they didn't like salmon!

just went to find recipe for you and found they've also got a risotto one too here

A packet of smoked salmon trimmings is often less than the equivalent packet of bacon, and you can make a lovely pasta dish with it with (low-fat) creme fraiche and lemon.

tinned salmon is underrated IMO. Nige does VG salmon fishcakes

I do a delicious thai salmon thing which does not need big chunks of salmon:

Take your salmon fillet and cut into chunks (for two people, you could do 200g although I'd say a bit more is better). Fry in sesame oil. Once nicely browned, put aside.

Add thinly sliced onion to the pan and fry gently with some garlic and lemongrass (and chilli if you like).

Add a teaspoon of brown suger so it starts to caramalise then add soy sauce and lime - about 2 table spoons of soy per juice of one lime. Depends how liquidiy you want it but I'd do two limes and 4 tablespoons soy. Allow to bubble. Taste to check if you need to adjust the lime/soy ratio.

Then add your salmon back in to coat. Serve with brown rice.

We have spinach with it too.

Also, what kinds of fish don't you like? You might be surprised what you do like that you dont' realise. DH thought he didn't like most fish. Turns out he loves most fish, he just doesn't like very boring plan grilled white fish.

As others have mentioned the smoked salmon trimmings are a cheap way to get salmon in. Fry cubed courgette in a pan, chuck in the salmon and some lemon juice if you like. Then add a tub of creme fraiche and serve over tagliatelle. Cheapish and quick (cupboard to table in 15 minutes)

If you can source some cheap fillets then it is nice done with pesto - cut large squares of tin foil (one per fillet) pour on a teaspoon of olive oil, add a salmon fillet and then top with green pesto (spread over top of fillet). Fold up the sides of the foil and fold over twice to make a bag for the salmon (but not tight - leave air over the pesto) and scrunch up the open ends so all sealed. Place on baking tray and cook for 20 minutes on 180 degrees C. Serve the fillets on a bed of fresh rocket, with new potatoes and steamed veg. Yum!

Recently, to use up some stuff in the fridge, I made a broccoli, chilli and lemon risotto, served with a baked salmon fillet on top. Easy peasy and delicious!

(That risotto also worked really well with king prawns, btw).
