What's your favourite healthy slow-cooker meal?

I'm gradually collecting recipes but a lot of them contain red meat or coconut milk, for example, and I could do with some more low fat/calorie ones if anyone would care to share :)

Sweet and sour pork/chicken is a favourite here.
Pack of pork loin steaks (or four chicken breasts)
Quarter cup tomato ketchup
ditto runny honey
ditto soy sauce
Two crushed cloves of garlic.

Put all together in slow cooker and cook on high for about an hour then turn down for as long as you like (3-4 hours).

Serve with nice noodles and sugarsnap peas.

Kids looked a bit doubtful, but chopsticks made them very keen, and as for the zips in the sugarsnaps . . . It's a keeper.

Chunky veg soup

Finely chop an onion and two cloves of garlic. Slice a leek into rings and chop up two stalks of celery. Briefly fry that up in a frying pan with a tiny bit of oil, just long enough for it to start releasing some of the flavour.
Meanwhile, chop three carrots, half a swede, and (optionally) some potatoes into more or less even sized bits.

Throw all of it into the slow cooker. Pour on two to three pints of vegetable or chicken stock (I'm lazy, just use stock cubes - enough to submerge everything well) and season with some ground black pepper, some dried herbs (I like thyme and rosemary) and a bay leaf or two. Switch on on high and forget about it for 3 hours or so.

Sometimes I add dried pasta to bulk it out a bit. You could also easily add chopped up chicken breast if you don't fancy something completely vegetarian, just throw it in with everything else. Once it's done, fish out the bay leaves and serve with some nice crusty bread.
