Having dh's friends for dinner on Sat night. Thinking of doing baked camembert for starter, then beef stroganoff for main and looking for inspiration for dessert. Will probably have to be relatively light as the first two courses are pretty heavy.

Eton mess

What about meringue with berries etc? Easy to do in advance and quite light.

jennymac · 22/02/2011 13:53

Have made them meringue nests on previous visit, so would like to do something different this time. Other desserts I have cooked for them before include chocolate fudge brownies with ice-cream and key lime pie. Don't want to do a cheesecake as the wife cooks desserts for a living and makes the most sublime cheesecakes ever, so anything I would produce in that area would be pitiful by comparison!

I saw a recipe the other day which looked v simple - frozen mixed berries with white choc sauce drizzled over them. Apparently the berries defrost slightly with the heat of the sauce, so you can serve more or less straight from the freezer.

I was going to suggest a chocolate and peanut butter cheesecake, but I see that this is no good for a couple of reasons! Grin

um, how about a raspberry sorbet, or something lemon-ey? Lemon tart? Yes, lemon tart would go well with your other dishes.

jennymac · 22/02/2011 15:41

Lemon tart sounds pretty good. Do you think I would have to make my own pastry or would a bought one do as well? Not very confident regarding my pastry making skills!

I always buy pastry. Much to the disappointment of my mother (and late grandmother).

ShirleyKnot · 22/02/2011 15:48

God no, buy the pastry. This Looks Easyish

Obviously forget about the goats cheese cream - whatever the JEFF that shit is.

olijackmum · 22/02/2011 15:54

sweet hot waffles with a nice ice cream then I usally have a chocoalte sauce, or maple syrup on offer to put on top of the ice cream and waffle very easy and very tasty

nigel slater has a recipe for a delicious and not too difficult to make white chocolate and cardammom mousse (tiny pot portions, it is very rich....). Grate a bit of dark choclate on the top et voila.... a delicious and lovely looking pud.

orangina · 22/02/2011 16:05

(failing that, waitrose do a top tarte tatin in the frozen food section.......!)

UptoapointLordCopper · 22/02/2011 20:14

lKulfi? I did it once without the saffron and pistachio but it was still lovely.

UptoapointLordCopper · 22/02/2011 20:14

Hmm.

Kulfi.

UptoapointLordCopper · 22/02/2011 20:15

Eh!?

Kulfi again.

ThatBloke · 25/02/2011 22:45

Profiteroles.

Can mix chopped fruit to reduce the cream & thin the chocy sauce.

Ok if you make the pastry large enough for ONE only.

Yeah, right :o

flyingcloud · 02/03/2011 20:15

Lemon cream from Nigella's How To Eat.

I usually make them in pretty glasses.
