Tenderloin of pork

Any idea what I can do with it? I've never cooked one before but picked it up because it was cheap

I bougth a tenderloin of pork at our local butcher on Saturday.

We made snitzels;

Cut it half way through lenghtwise and open it out (butterfly it in effect)
Bash vigorously with a rolling pin so you get a big thin 'sheet' of meat.
Cut into 4 pieces.
Dip each piece in egg and then a homemade mixture of breadcrumbs, herbs and a pinch of salt.
Shallow fry until lightly golden.

Delicious!

Yummy!

We buy this a lot. We sear the outside in a pan with garlic and oil and pop it in a casserole dish. Then we fry some cut up leek in the same pan with some butter and sage and put this in beside the pork.

We put it in the oven at about 180 til it's cooked. Can't for the life of me remember how long for, but it's between 25 and 40 mins. Just check it's cooked before you eat it.

I just slice it up into little rounds.
Pan fry with some garlic and mushrooms.
Add a good glug of wine.
Then add some cream.
Simmer until the sauce thickens slightly. YUM.

I did this yesterday. I sliced it in half lengthways and bashed it Behind says to amke a thin sheet of meat. i made up some stuffing with a packet mix of stuffing and added some sausage meat and caramelised apple. then rrolled it up like a swiss roll. Wrapped it in pancetta and cooked in the oven then sliced into rounds.

Oooh, Aworrying - that sounds great and was in fact one of the recipes our lovely butcher recommended. Will try that next!!
