I sometimes wrap salmon fillets in Parma ham - clearly doesn't need the fat, but it's very tasty with new potatoes and veg :)

Finely crushed garlic, fresh Ginger and chili, mixed into a couple of tablespoons of soy sauce and fish sauce if you like it, with a squeeze of lime. Then place the salmon in foil envelope and cover in this marinade. Leave for a while to absorb flavour in fridge. Just before cooking finely chop some sponge onions and sprinkle over. Cook for 15 to 20 mins in the foil parcel.

Serve with pak choii, broccoli, carrots mange tout and all on a bed of noodles.

Tis yummy....

My fave thing is marinading it in garlic, soy sauce, golden syrup (tiny bit of), sesame seeds, chilli.

They are too chewy.....

Wrap it in parma ham or pancetta, drizzle with olive oil and bake in oven..

We used to regularl cook salmon with a kind of thai sauce - fry salmon cut in chunks in sesame oil. Remove when nicely browned. Then fry slices of onion with a little garlic and some lemon grass in the same pan (add some chopped chilli too if you like the heat). Add a little brown sugar to caramalise it then the juice of 1 - 2 limes and 2 tablespoons soy sauce per lime (you can adjust according to your preference). Let it bubble for a minute then put the fish back in. Serve with rice. I like to serve spinach on the side too, or in summer, big chunks of cucumber.

Come to think of it, I think I'll make this again - we haven't done it for ages!

is soy sauce soya? I didn't realise? I thought they were different. In which case, sorry, my recipe won't work for you.

Tahini and fresh thyme.

Or homemade pesto where you use finely ground almonds in place of parmesan.

I quite often cook it in foil with a dollop of RED pesto smeared on top.
