pak choi - or similar?

any ideas on what i can use if i cant get it?
for noodle soups

Hermy,I am a frequent haunter of Asian supermarkets for every variation on the theme of noodle!
I very often use plain 'ole lettuce. The cheap old fashioned flat ones work great. Also iceberg (only thing it's good for imho).
Spinach is fine too.

Chinese leaf or plain white cabbage shredded very fine make decent substitutes. Likewise leek (depending on the flavour of the soup, as leek can taste very strong).

Chinese people actally put letuce in their soups as it apparently soaks up the fat and oil and is better digested once eaten...leaned this for a chinese person.
Bak choi or choi sum will do just fine or chinese cabbage
