I have a raw chicken carcase in my freezer

It was a bonus in a meat box and is languishing there becuase I don't know what to do with it.

I always make soup with the bones after roasting a chicken. Do I need to cook the carcase to do the same? Will it work, there being no actual meat on the bones? I also have a pack of giblets I can throw in with it

Any advice?

Yes, I think you do have to roast the carcass first.

It intensifies the flavour and reduces the scum you sometimes get on the soup.

I make it in my pressure cooker, but if you haven't got one (and they are worth getting), just put the roasted carcass, plus sweated giblets in a pan with sweated veg. Carrots, onions, leeks, celery, that sort of thing.

Set to cook for about one and a half hours, probably two.

Skim the top from time to time.

Remove bones and the giblets if you like or remove bones and take the meat off the giblets and chop to equal size. It really depends how rustic you like your soup.
