I am a competent cook BUT I cannot cook fresh fish - it scares me somehow.

Can anyone share their easy fish recipies or recommend me an idiots Fish Cook book please?

Really easy way to cook the meatier types of fish - cod, salmon, tuna - is to oven bake. You need a small frying pan that is all metal because it goes from the hob into the oven

Preheat the oven to 200C. Take 1 salmon portion and season with salt, pepper and lemon. Heat a little oil in an all-metal non-stick frying pan or griddle. Place the salmon in the pan and allow to cook for a minute. Then transfer the whole pan into the oven and bake for 6 minutes only - set your timer. Serve immediately with your choice of fresh veg etc.

An nice method for more delicate, white fish is en papilotte which means greaseproof paper parcels. Place your fish with some chopped herbs and a little butter on some double thickness greaseproof, fold it into a loose parcel, place in a baking tray in the oven and give it about 7 or 8 minutes on a moderate heat. This retains all the juices and the fish stays in one piece.

Fillet of Cod, haddock or (by far the nicest) Whiting if you can get it. Dip in flour, then beaten egg, then roll in dry (toasted) breadcrumbs and shallow fry. Serve with a slice of lemon. Simple, quick and very very tasty!

We like the home-made 'breaded' fish as previous poster but with crushed cprnflakes instead of breadcrumbs.

My problem with fish is getting to be cooked through but stay together and be presentable. I like fish cakes for this reason because it doesn't matter if the fish flakes.

With white fish I like to do a ratatouille type sauce - softened veg and a tin of tomatoes. Put the raw fish in a casserole dish, add the sauce, top with cheese and bake at gas 5 for half an hour or so. Serve with rice.

Put a lemon slice on a piece of tinfoil. Put a salmon steak on top of that. Put some butter and pepper on top of that. Start fding up the sides of the tinfoil and throw in a splash of white wine. Form into loose parcels and bake for 15-20 minutes. Serve with new potatoes and some Creme fraiche mixed with chopped watercress.

Might have to make that this week now.
