Help! has anyone got a low budget, easy and wheat, gluten and dairy free lunch recipe?

Is there anything along the lines of cous cous, quinoa or bulgar wheat that is wheat and gluten free? If so you could make a variety of tomato or vegetable based sauces to go with it to make a nice lunch.

You can make a normal meal with rice or potato and vegetables. Just dont put flour in it and make sure you make the sauces yourself - you can use cornflour.

Many of us coelics are also lactose intolerant so dont put milk or cream in things. You can buy soya cream in Sainsbury as well as soya milk or lacto free milk.

Otherwise coeliacs are normal people.

I had chicken paprika with rice for lunch but used soya cream instead of real cream with a 2 tsp of vinegar to sour it.

Use a liquidised tin of tomato rather than fresh tomatoes - better flavour.

Serve with a salad or any veg and rice.

By the way cous cous is wheat so dont do anything with that.

Thankyou. So is quinoa ok?? Apologies for total naivety!! [embarrassed] I didn?t realise how much my lunches contained these things till i had to think of a lunch without them! Total brain freeze tbh.

Quinoa is very good. Its a bit filling IME but is a 'super food'.

Holland & Barret sell it and the cooking instructions on the back of their pack works well if you haven't done it before.

i couldnt get past the jacket without butter Shock. Its abit like tea without milk or fish without the chips!

Have decided on Quinoa with spring onion, fresh corriander, tuna and some spices, with a side salad.

My organic veg box has just arrived tonight with a HUGE beetroot in, so im going cook that up aswel.

Thankyou for shifting my mental block!!!

Yuck to beetroot though. The only food in the world I won't eat. Grin

Ah, I was going to suggest puy lentils cooked in chicken stock with onion, garlic, a grilled romano pepper, flat leaf parsley and a pork chop (and a lemon juice, mustard vinaigrette). But you've just shown me how to use up the jar of quinoa I've had hanging about in the pantry for aeons.

(BeenBeta, have you tried Hugh Fearnely Whittingstall's beetroot brownies? They are beyond delicious. You would never think it was beetroot - so theratpack, I can't egg you on enough to use your massive beetroot for that.)

Most of our meals are easy and wheat-, gluten- and dairy-free. We cook Chinese and Japanese rice meals very often. Just use gluten-free soya sauce and you are home and dry.

You could just get the ingredients and let everyone do their own temaki sushi roll, after a tutorial on youtube. We did that once. It was great fun.
