Super easy chicken curry

  • bung diced chicken, chopped onion, and whatever veg you like in the slow-cook (usually I use diced sweet potato, sweetcorn, and peas)
  • pour in a tin of coconut milk
  • add two tablespoons of curry powder, the strength is up to you, I use mild but whichever suits your taste
  • cook, serve with rice (I cheat and use microwave rice)

Pretty much everything in this can be substituted for something else - the meat and the veg. The base is the coconut milk and curry powder and anything can be added to it.

Beef cobbler (by it's real name but that's what we've always called it)

  • steak mince, chopped bacon, diced courgette, and chopped onion into the slow cook
  • pour in an inch or two of water
  • add a tablespoon of curry powder and three tablespoons of tomato purée
  • cook

Lamb stew with mint dumplings

  • put cubed lamb, potatoes, carrots, turnip, and onion in the slow cook and add enough water to just cover it all
  • once cooked add gravy granules
  • mix up some dumplings and stir a teaspoon of mint sauce into the dough
  • roll them into balls and drop them on the top of the stew, cook until they're done (takes about 30-40 mins and they swell up huge from the steam)

Blueberry rice pudding

  • add pudding rice (short grain rice) and milk to the slow cook. I forget the exact quantities but the packet will tell you, it's something like a cup of milk per cup of rice
  • chuck in some blueberries, a little bit of nutmeg and cinnamon, and a tablespoon of honey to sweeten it (optional)
  • cook on low until the rice is soft, the blueberries tend to burst and make it a white-purple swirly colour which my DS seems to love (he has a giggle when it's put in front of him)

Slow cooked bolognese

  • you can use either minced beef or diced beef, whichever you prefer, chuck it in the slow cook
  • add a small carton of pasatta, a chopped onion, two cloves of minced/crushed garlic (or a teaspoon of the ready chopped stuff), and a good pinch of mixed herbs
  • I often sneak some extra veggies in, chopped tomatoes are easy and they blend in and now and then I add chopped yellow and red pepper, mushrooms, chopped celery, whatever I've picked up at fruit shop basically
  • just cook until you're ready to dish it out and all you need to make is pasta to go with it
