Bean free burrito or enchilada recipe please!

I know refried beans/kidney beans are a big part of Mexican cuisine and these dishes, but my DC just don't like them, and they will be less likely to eat it if they have to pick them out.

So, please does anyone have a great enchilada or burrito recipe I could use minus the beans? Pref a minced beef version rather than chicken.

tbh i just use my normal chilli recipe for enchilladas and fortunately my lot will eat it tho admittedly ds2 took a while to like kidney beans!
do your dc like bog standard baked beans?
if so why not add cannellini beans to it or bulk out with lentils and extra peppers?

hi blonde!

sadly they don't like baked beans either, so I think I will forego the beans. I have found quite a good looking one online that involves lots of tinned toms and salsa and then a rich tomato sauce over with cheese and spring onions.

I have 2 recipes on my blog here - one is for chicken enchilladas and one for BBQ pork enchilladas - neither involve beans :)

HowTo - ps if you want some tips on cake pops let me know. I made lots last year, very successful. I found watching a few clips on youtube really helped.

I bet they were delicious.

Firstly, I cheated. I bought Sainsbo's basics madeira cake and added choc buttercream icing to it, then shaped into balls, put in sticks halfway through, put them on a greaseproof covered baking tray and froze them for 20 mins.

Meanwhile I melted white choc buttons in a bowl oover simmering water and then added pink dust to half and blue dust to the other half til I got the colours I wanted.

Then I got the pops out of the freezer and dunked them in the coloured chocolate, twirling and swirling for a while until they stopped dripping, and then poked the stick into the polystyrene. Then I decorated them, coloured balls, sprinkles, white choc stars, sparkle dust etc. Once they were all done I kept them in the fridge til they were needed.

I got the polystyrene, edible colouring dust and sparkles, lollipop sticks etc from here.

The dust is good for colouring the white choc as it doesn't contain liquid, obv if you use normal food colouring or paste the choc will seize up.

Thank you! I didnt freeze my pops after i forst put them on sticks, that ay be why they slid down the sticks after I coated in chocolate!
