Lunchtime inspiration

Help! Have 2 DSs, 3.4 and 11 months (BLW).

I'm fine with evening meals, but really hitting a brick wall with thinking of different things for lunchtimes. Keep reverting to sandwiches Blush and plain cheese ones at that!

I'd like to have some nutritious, tasty and quick ideas for lunch and I am trying to cut back on the amount of bread they eat.

I do ...

Cheese on toast
Pasta (creme fraiche and tuna / tomato and veg)
Omelettes
Pitta breads
Humous and veg sticks (but the veg sticks often get left!)
Eggs and soldiers

Please help!

bagels (try houmous and cucumber, tuna mayo)
Beans on toast

If you have a salady type lunch (such as the houmous and veg sticks you mention) then add a more filling second course such as home made cake or some rice pudding.

pizza

Sometimes I do "posh" sandwiches at home like you might get at a pub. e.g. crispy chicken plus sweet chilli sauce/mayo on nice crusty bread. Salad garnish and a few potato wedges/oven chips on the side.

If funds allow could you go out once a week. We have a few cheaper places near to us. e.g. Morrison's cafe, dd and I share a little tray of sandwiches, she has a smoothie and I have coffee and cake too (share the cake with her)

Me and DS (3) are eating a lot of cous cous at the moment (DP isn't so keen!)
Plain or flavoured cous cous to which I add tinned chickpeas, tomatoes, cucumber, pepper, cheese and anything else that's hanging around. DS calls it "treasure lunch" as he digs bits out and says "I found treasure!" Grin

Other favourites at the moment are toasted muffins with egg mayo, and muffin pizzas (toasted muffin, topped with tomato puree/sauce, cheese and veg).

Tortilla, i.e. Spanish style omlette with potato is nice too.

And DS's number one favourite - beans on toast!

Our favourite lunches (that we pretty much have every weekend, yawn!) are baked sweet potatoes, usually with tuna & sweetcorn mayo, nice with ham and blue cheese too or whatever baked potato toppings you like...I LOVE sweet potatoes, as do DD(4) and DS(1)...he can get a bit messy with his!

Other favourite is quesadillas, again usually with tuna & sweetcorn mayo, plus grated cheese & sweet chilli sauce, although any filling + some kind of cheese + some kind of sauce would work. Dry fry one tortilla wrap whilst spreading filling on 2nd wrap, place hot wrap on top of filled one and dry fry again filled side down whilst pressing around edges to seal. Much easier than I've made it sound, although be careful not to burn them - by the time I've made quesadillas for everyone else the pan has heated up & I usually burn mine!

Now that DD is at school, DS and I tend to have quick simple things as I don't make as much effort for just the 2 of us. Today we're having poached eggs on toast. Yesterday was avocado with prawn mayonnaise. DS likes stuffed mushrooms too - I just stuff them with some Philadelphia soft cheese and torn up ham, topped with grated cheddar, before baking in the oven for 10-15 minutes. Nice, but messy!

Spaghetti carbonara is simple and quick. Doesn't need to be spag, it can be any type of pasta with the exception of lasagne.
DD and I are about to have a home made pizza. We used crumpets as a base so I am not sure how sucessful it will be.

cheese toastie
pitta pizzas - use the pitta like you would a pizza base then add tom purree, grated chesse, whatever you like and pop in the oven for a bit
sometimes ds will have porridge with banana
waffles & beans
how about pate on toast, ds loved it when he was little
