need a lovely brownie recipe

We've got friends coming over tomorrow, I have dinner sorted but was thinking of brownies and ice cream for pudding. does anyone have a good brownie recipe they care to share?

How chocolately do you want them?

I love these but the DCs fine them a little rich.

300g caster sugar

4 eggs

225g unsalted butter
75g cocoa

75g plain flour

225g plain chocolate

100g pecan nuts or walnuts, chopped
100g white chocolate, chopped

Pre-heat the oven to 200ºC/400ºF/gas mark 5 and grease a 20cm tin.

  1. Melt the butter and plain chocolate together.
  2. Beat together the sugar and eggs until pale.
  3. Sieve the cocoa and flour together into the egg mixture.
  4. Add the melted butter and chocolate.
  5. Mix it thoroughly, then add the nuts and white chocolate and mix again.
  6. Pour into the cake tin and cook for 30-40 minutes.
  7. Cut into squares when cool.

sounds lovely, really don't mind, the littlies can have a smaller bit with some ice cream if its too sweet. I'm sure the adults won't mind....might need to buy a cake tin tomorrow though, just realised I don't have one that sort of size!

This isn't quite a brownie (I love Delia's recipe for those) but I made this chocolate truffle cake last week. It was easy and turned out really well - soft, velvety but surprisingly light.

250g good dark chocolate
150g butter
150g caster sugar
5 eggs separated
30g ground almonds

Pre heat oven to 160C and butter and line a 23cm cake tin.

Melt chocolate and butter together til smooth, allow to cool a little and add 50g of the sugar and an egg yolk. Gradually add remaining egg yolks. Whisk egg whites til soft peaks then add the rest of the sugar a tablespoon at a time until the whites are stiff and glossy. Fold in the chocolate mixture. Bake for 30-35 mins. Leave to cool in the tin for 20 mins, then take out completely. It will sink and crack, but it's meant to.

Lovely with cream, icecream or creme fraiche. I made a hazlenut baileys cream coz it was a girls night. YUM.

smartarse i went with your recipe and fashioned a cake tin from a roasting tin and some greaseproof paper, will update later on how they went down! look lovely though!

I'm sure they're delish! Being fairly chocolately, I think they're a bit more grown up and dinner party than the usual.
