Best way to cook butternut squash to go with roast chicken please.

I have just read this on Wikipedia:

One of the most common ways to prepare butternut squash is roasting. To do this, the squash is cut in half lengthwise, lightly brushed with cooking oil, and placed cut side down on a baking sheet. It is then baked for 45 minutes or until it is softened.

Can anyone with experience tell me if this is the best way to cook it? Need to know in the next half hour please!

I do mine cut side up with a few herbs, salt and pepper on top of the olive oil. Yum!

Thanks. Now, I know I sound a bit stupid but further up the article in Wiki, it says you don't eat the skin but it can be eaten if roasted. So do you folks eat it or cut the flesh from it once it is roasted?

Thats how I cook it.
You could put them in the tray with the chicken too, to roast in the juices.

The skin foes all papery so I scoop it out

I chop mine into decent sized chunks on days I can be fussed to peel it so you get nicer crisp ish edges all round. Generally as part of big pan of roasted veg, parsnips, sweet potatoes, red onions and peppers. Use left overs with Cous Cous next day. Yum.

I roasted one yesterday it smelt divine

Have scooped flesh out, rrather rashly, to amke soup

Wish i'd left it in the skin

get rid of seeds though first!

cut as per your first post, scoop out the seeds, bake cut side down, then scoop out flesh to eat and discard skin.
