Brocolli and stilton soup - recipe says double cream, I only have single is that ok?

If you are using single cream, take the soup off the heat before adding it or it could curdle a little. Even if it does, blitz the life out of it and it will taste fine.

Yes. Double cream sounds too much to me anyway.

Thanks for prompt replies, milk sounds interesting as obv less fat, will it alter the taste or consistency much though, I've only semi skimmed in.

Milk makes the soup not as thick as cream would but gives it a boost. I've not used stilton in soup but with other cheeses I find milk lets the cheese flavour shine through.

Creme fresh or greek yogurt are also great alternative to cream - and low fat!!
