Flapjack recipe - not nigella asap pl

kmg1 my dh would look at anything I had baked suspiciously and wonder if I was turning into Nigella. All this baking, when do you get time!

Having said that, made dd a bday cake (with shop bought sponge slabs which I sculpted and filled and iced and decorated (for scultped read hacked and swore profusely for half an hour). It certainly won't be mistaken for a shop bought one, whether anyone will have the nerve to eat it is another matter.

Best flapjack recipe ever:

Oven at 150C/Gas mark 2

150g unsalted butter
120g light brown muscovado sugar
1 tablspn maple syrup
250g porridge oats

1 18cm sq cake tin

Heat butter, sugar and syrup gently until dissolved.
Remove from heat and stir in oats. Mix well.

put mixture into tin, cook for 25/30 mins, until golden.

I prefer it with 'jumbo' oats, but the rest of my family with ordinary porridge oats, but it all gets eaten in about 5 mins, whichever I use! In fact, I tend to make double quantities.

Made my first batch of flapjacks ever tonight, a la Talking Tree's recipe (thanks TT!) but had to substitute maple syrup for the golden stuff - yummmmmmmmmy

Wendyread - we crush weetabix up with grated cheese and use it like a crumble on things like cauliflower cheese, fish in cheese sauce

Here's a version I've kind of developed over the years that is a real hit with adults and kids alike.

FRUITY FLAPJACK

Gas 3 / 170
INGREDIENTS

150g butter (please use real butter, margarine will ruin the flavour).
120g dark brown sugar
5 tbspn syrup

460g oats
60g plain flour
150-200g Asda dried berry mix (adjust to taste)
70g sunflower seeds
70g pumpkin seeds

METHOD

Melt the first three ingredients together slowly in large saucepan.

The add in all dry ingredients and mix thoroughly.

Press down well into square tin, I use a potato masher. (The flapjack needs to be 3 or 4 cms deep).

Bake for about 45 mins, but check after about 30 mins, don't let it get too brown, needs to be just golden.

Leave for a few minutes and then score into squares, but leave until completely cold to cut.

The dried berry mix has cranberrys and cherries and huge golden sultanas really yummy but you could obviously just use raisins or chopped apricots or whatever you have. Would recommend trying some when you get the chance though. The flour really helps it not all to just fall apart and make a big oaty muesli.
