I'm not an expert but I would. I usually use creme fraiche instead of single cream so assume it would work the other way round...

Erm, creme fraiche is much thicker. More like Greek yogurt. It depends on the recipe - what is it for?

Do you stir it in at the end? Its not the same as creme fraiche, its sweeter and thinner, so won't have quite the same effect on the sauce.

if you boil single cream it will curdle - so just stir it in at the end

yes, it was a stir in at the end thing... I guess I'll have to thicken with cornflour as well then.

Creme frache is a little bit more sour too, so you might want to add a splash of lemon or lime juice.

I think CF is a wonderful ingredient, I use it all the time, sometimes as a replacement for "proper" cream, so if you get a chance to buy CF, use that. It keeps for ages in the fridge too.
