What to make with Brown rice flour?

Does anyone have any recipes?

I have a bag in the cupboard which needs using by next month and I have no idea what to make!

I've been using harry eastman's cake book, Red velvet chocolate heartache. It uses rice flour a lot as well as loads of vegetables like pumpkin and courgette to make fairly healthy, low fat cake (until you add the icing... Grin)

I'm sure brown rice flour would work for some of the more robust recipes

She's a very minor TV chef, on something like cook yourself slim on C4 a while back.

I've managed to use up loads of weird veg box contents this way. Lots of the recipes use ground almonds as well, so one to avoid for allergies.

I've got a feeling rice flour is a bit low on gluten for bread, but there may be specialist recipes out there.

I've got the munchies now - may have to thaw some of my emergency stash and ice them [bsmile]

Just had a look on amazon, yes recognise her from cook yourself thin. I like Gizzi Erskine from that show too. Bought her recent book for a friend, great recipes but not low fat!

Cakes look yummy, I shall order the book. Sod the bread I'm going to make cakes! [bgrin]

Have you frozen them cooked? Do they defrost ok then?

They are pretty yummy, my boys have had so much sneaky veg recently [bwink]

I've frozen a lot of the cupcakes, as I've been using up veggies and they seem to survive the process. They maybe get a little dryer after a couple of months which is the longest I've left them. I found that using the microwave defrost, ice, then scoff asap works very nicely.

beware the paprika scones - the recipe says 2 tablespoons when it should read 2 tsp - they were nasty!

Just remembered I think I bought the rice flour because I'd seen it on the 2nd series of Cook yourself thin, my memory has a lot to answer for!

Thanks, I love paprika but even 2 tablespoons sounds a lot!

Think traditionally rice flour was used to make shortbread (half rice flour half plain flour) as it gives a better texture - could try that?

Ooh thanks will do that. I made shortbread for grandparents christmas pressies and they weren't the best [bhmm]

Definitely need more practise!
