Oh Blimey - just booked 5 days self catering for 7 people (including 2 coeliacs) - help!

Eeek just booked a Haven holiday home, apparently it's a full kitchen (although I saw no reference to a freezer?).

I have no idea what the convenience store on site will have, or how expensive, or if we will be able to get to a supermarket (no car).

So just looking for ideas for cheap food really. So far I have:

  • taking gluten free bread, pasta and crackers
  • snacks - just giving DH's kids a tenner each to buy their own for the week. They eat it all, their problem :o
  • maybe getting a disposable BBQ
  • jacket potatoes
  • sandwiches
  • scrambled eggs/omelettes
...

Any inspiration? They like quite simple food and one is quite fussy, but even things like fresh mince is pretty expensive Confused

Would love any ideas.

Rice.

Tinned fish.

Rice noodles.

Gluten-free soya sauce + honey marinade on any meaty things. Cook. Eat with rice. Yum!

chilli and rice
curry and rice
GF pasta bake. (many GF pastas taste almost the same as normal pasta)

I have a gluten (and dairy) free best friend.
She has learnt that some GF bread /cakes / stuff is really really discusting and there are just a few brands that she finds edible... so make sure whoever is GF oks the brand of bread / muffins etc

also soup
something like one pot chicken and rice

roast chicken (or other meat) with roast pots and veg

Hot ham with mash

GF sausages with potatoe and veg

baked beans are gluten / dairy free

I will see if the DCs have any requests. DH is one of the coeliacs, along with one of his (not our) DDs. So we know what we are doing IYSWIM... Just not on holiday!

There are lots of cake recipes with almonds instead of flour that are delicious for everyone - the dense texture makes them good for puddings - and suitable for coeliacs.

Bake and take
gf banana lemon cake along. Bake two, stack with jam in between. It's dense enough (in a nice way) to feed a few people for a few days!

could you prepare any meals before you go? for example make a shepherds pie and a chilli then you have supper for the night you arrive and the following day?

how about taking a chicken to cook and have it with salad and new pots.

we had a caravan when we were kids and one of the best meals was tinned soup and sandwiches after a long walk Grin

How about a cooked gammon/ham joint, nice on sandwiches but you could also pop to the chippy for a few bags of chips to share.

the store on site is likely to be expensive and a bit rubbish

Unfortunately we do not have a car! So the only food we can take is the GF stuff, and that's only because we may not find it at the local supermarket. We will take bread, rolls, pizza bases, crackers and cake mix.

We will go to the supermarket in town (not the store on site) once we've dropped off our luggage. Have written a list of basic stuff and OMG once you add on stuff like fruit it's friggin' huge!!! Think we will need a taxi back Hmm

Although, I'm wondering if you can get online deliveries to the site? Like from asda?

A friend told me she got a Sainsbury delivery to a holiday cottage. So maybe that's a good plan!

Along with rice, and gf baked goods, get some corn tortillas so you can have fajitas with whatever fillings you want.

Ooh, we love that kind of food. But where do you get corn tortillas? When DH was first diagnosed we used to get ones made by Discovery, but haven't found them for years :(

Oh sorry, was going to suggest Old El Passo but I just checked them and they contain wheat flour.

I believe that, should you happen to have your own own tortilla press and cornmeal, they aren't too difficult to make. Don't suppose that helps you much.

NB - Sainsbury's do the Discovery ones too, and they have more wheat flour in than corn.

BUT if your DC can take a bit of spice you could have my favourite brunch dish: chorizo hash - really good with some sour cream / guacamole on the side.

Take a crock pot & a large lidded casserole dish with you

that way you can cook large amounts rice in the microwave in 15-20min, & curries, chillies, stews etc will cook in the crocpot whilst your out enjoying yourselves

Can't take any cooking stuff with us sadly as we have no car :(

Apparently the kitchen has the full works but we will probably stick to the basics unless we can get a full list of what they have in advance.

We do make a lovely mince stew to have with rice.

I find we can usually cope with whatever they provide in the kitchen. But I always bring my own kitchen knife. Smile
