Ok, so my first attempt at making my own yoghurt appears to be going badly...

It seemed easy enough: heat milk to 88 degrees; let it cool to 44 degrees; add a blob of natural yoghurt; let sit in sealed jar, in an insulator thingy for 4hrs til it sets.

Lo and behold, 5.5hrs in, I appear to have sour milk. Will it set? Is there anything I can do to help it? Or should have done?

No, that's not enough time. I usually leave mine overnight and IIRC the min recommended time is 9 hours.

thanks all! my book said 4hrs, that's why I was checking. funnily enough I had a look not long after posting this thread and it had started to set.

now it is fairly thin and kinda sticky (ie, if you lift a spoon out it trails threads a bit like honey) - does that mean I chilled it too soon?

trying to tread a fine line between making it and persuading my family of sceptical sweet-tooths to eat it!
