Quick meals/in advance/from leftovers help pls!

DD has started school and will be starting afterschool club next week for three days a week, meaning that we won't get home until around 5.30pm and everyone will be hungry!

I'm trying to think of very quick meals to make or combinations of two meals where I can, for example, make something on a Monday evening when I have oodles of time which I can then use for Tuesday tea when it will a rush. Maybe even a good freezable meal, although our freezer is tiny so can't batch cook lots.

Help!

chilli con carne - improves on reheating
stir fry - if you use pre-cooked noodles it takes about 5 mins?
Pasta & pesto - 15 mins?

Can I cook and reheat the rice for chilli con carne too do you think?

Stir fry is a great quick idea, how did I not think of that!

I do have a slow cooker but we leave at 8am in the morning, wouldn't that be too long to leave stuff? I'm not very confident with it.

DD and I can and will eat anything, DH is more picky and won't eat onions or tomatoes unless they are squished in a sauce.

if you put everything on low it will be fine,just remember to place veg,pulses at the bottom and just enough stock or liquid to cover the meat
could you poss cook a chicken on your less busy day and then use the leftovers for your quick dinner ie stirfry/fajitas or risotto?
the chicken can even go in your slow cooker freeing up more time for you!
rice is fine to be reheated but it must be completely cooled down when it has initially cooked
i sometimes do this but will reheat it covered in the oven

Could you do jacket potatoes or something else in your oven if you have a timer and you know exactly when you're going to arrive home?
