meal suggestions made in advance to re-heat/cook

my mum is going into hospital for a few days and will have a 6 week recovery.

i want to make some meals to drop round that Dad can heat up for their evening dinner.

some restrictions:

  • no pasta
  • not too much red meat
  • not keen on tomatoes!
  • very limited dairy

so that rules out any pasta bakes, bolognaise etc...

btw my mum is very keen (and needs) her vegetables...

Not really answering your question in the way that you wanted but would it be easier for you (presuming you're having to prep all the food) and your Dad, if you got someone like Wiltshire Foods to deliver meals for that recovery period?

Have a look here for some inspiration - you can select the kind of dishes you want (they're expensive there, but no reason you can't take ideas from it)

but for starters

Lentil soup (tomato though)
Veggie or chicken curry. You could freeze portions of rice as long as they're cooled quickly and reheated thoroughly)

Quiche

Chicken and ham pie (individual portions perhaps?)

Any casserole/soup that you make that fits the above criteria (chicken stew - nom)

thx for such fast replies, mum has been to "Cook" which home makes and then freezes food to reheat later. just want to make as many as i can and drop them over for that day (am only 20 mins away)

will have a look at Wiltshire foods and Jareth's link.

I was going to suggest Cook, like Jareth too.

Or you could you order ready meals from Waitrose/Ocado for them?

If you do want HM (although Cook are very like HM albeit expensive) what about:

  • Meat and potato pie or similar
  • Cottage pie/shepherds pie
  • Beef/lamb/pork stew (lots of inspiration on the BBC Good Food website if you want variety and can all be served in small portions with lots of veg and a carb of choice)
  • Fish pie
  • Frozen salmon fillets that can be cooked from frozen or steamed/microwaved

roast dinners also freeze well as do yorkies
i include all the veg and trimmings in my foil containers
sausage n mash
toad in hole
any casserole/stew as mentioned
just defrost thoroughly and then reheat in the foil containers for 30 mins @ 180oc

Anything home made will be much nicer than ready meals, and I'm sure your Mum will appreciate them even if you can only make a few. By the way, can your Dad not cook a meal (rather than just heat up?). Sorry I don't know your circumstances, he may be too elderly/disabled etc.

I would go for caseroles (chicken, pork or vegetarian if you don't want too much red meat), curries (would freeze very well) and maybe hotpot/cobbler/pies. Also shepherds pie, fish pie (with potato topping) would freeze well.

thanks all, SoMuchToBits, my dad is just used to my mum doing everything rather than elderly/disabled!! he is quite willing but needs very clear instruction/direction! some part of me thinks it will be good for him and i won't be overly pampering him when she is in hosp!
