What can I do with 2/3 jar of mincemeat that isn't mince pies??

Don't know about cakey (Swiss roll?) but you can put it inbetween two layers of flapjack before baking.

or make a brownie mix and put it in- enhances the flavour of the chocolate- honest! ...or put it in an apple pie/crumble....

Mincemeat shortbread (basic shortbread recipe, with mincemeat stirred in - I found a recipe for it invery 1070s cookbook, it is gorgeous)

Mincemeat turnover, puff pastry filled with mincemeat, slash the top bake for 20 mins.

Mix with lots of finely chopped cooking apple (which has been cooked for a few minutes to soften) and some grated lemon zest, and use to make a strudel - just a pack of puff pastry rolled into a long rectangle, then make it into a sausage with the mincemeat inside - seal edges and ends (which you should tuck under) with a little egg wash and bake at 180 degrees until pastry looks done - probably about 30 minutes

Nice with icecream or custard

Mix it into a regular sponge cake mixture and bake as normal.

Add to a cheesecake mix, baked or chilled (chilled only if it's a fat-free mincemeat).

If fat-free you can also stir it through plain yogurt.

Add to proper, home-made milk-and-eggs custard, then bake in shortcrust to make a stonking custard tart.

Mincemeat and maple syrup palmiers...

sheet of puff pastry, thin layer of mincemat, some pecan nuts roughly chopped, thin drizzle of maple syrup, rolled up, cut into 0.5cm thickness and cooked. Yummy even for my boss who 'hates mincemeat'!

Brilliant, thank you all. I think I will try to mix it in with a normal cake mixutre - didn't think of that at all but guess it would end up quite fruit cake-ish.

It's for a buffet type event so anything more pudding-y won't work, but I love the idea of the cheesecake too! And the strudel. And the crumble. Hungry now :o

These have pastry base but frangipan topping here(scroll down to frangipan pies) but you could probably do a big version you could serve in slices - similar to a bakewell tart I would guess.

Rudolph buns not sure if they're a bit Christmassy though? they're very yummy. I don't both with rolled out icing, just use glace icing.

Delia's has a mincemeat crumble pie, using a shop bought pastry case ( cook from frozen, apparently the pastry is better if its frozen ), chopped Bramleys mixed with almonds and the mincemeat and then a crumble topping.

..........or, stuff inside Bramleys with some demerara ontop for unbelievable baked apples. gorgeous with really good vanilla ice cream.

Kurri - here's the recipe

200g sr flour
100g butter cold cut into pieces
85g soft light brown sugar
85g marzipan cut into 1cm cubes
2 eggs
300g mincemeat
2 tbspn flaked almonds

Preheat oven gas 4/180c. Grease and line a 2lb loaf tin. Tip flour into bowl of food processor, add butter and process until small crumbs. Stir in sugar and marzipan cubes. In another bowl, lightly whisk eggs, then stir in mincemeat, stir into flour mix. Spoon into loaf tin, smooth top and sprinkle over flaked almonds. Bake for 1 hour or until a skewer inserted in the centre comes out clean. Lightly dust with icing sugar whilst still hot. Cool in tin for 10 minutes then on a wire rack. Keeps well, wrapped in greaseproof and foil for 5 days or so.

I have a recipe that involved mincemeat and marmalade and creates a lovely cake, will post it later if you want it? Can't do now as not at home.
