Has anyone seen marmalade making oranges this week? As I would like to make some this year. Last year I was so busy writing my cookbook that I forgot to make any!

riverford have theirs out.

I did the boil whole, let it cool down then chop method. So much easier than riverfords own recipe (cut in half get rid of pith, use muslim bag, slice raw peel finely method) turned out splendidly and it meant that I could do it over 2 days.

I bought some on Saturday - I got 6lbs and have made 25 jars (!) in 2 batches of 3lbs. Lovely. Should last quite a while..... :)

If you can't be bothered to make the marmalade all at once, the oranges freeze very well (whole) and then you can make a "fresh" batch later in the year.

IMO the flavour of jams and marmalades deteriorates over the months.

mmb - I have frozen whole Seville oranges and used them later in the year, and have also eaten my own marmalade made in Jan the same time period on. The old stuff tasted far superior to the new stuff I made with the frozen oranges.

Really!?

I swear by freezing half! - freshly made jam of frozen fruit is far nicer than 6 month old jam made when the fruit was fresh, imo!
