Cake for no dairy child

It's my daughter's birthday on Friday and I've invite a little girl to her party who can not have dairy at all. Can i use soya milk in place of normal milk for fairy cakes and obviously i have to use Vitalite or something instead of butter. Anything else i should know?

I use the Pure sunflower (not soya or olive) for all baking for my DS with dairy intolerance, it tastes much better than all the others. I also use oat milk in place of normal milk, some children can also react to soya if they are allergic to dairy so I'd check with the parents first.

You need to be very careful about picking out a margarine to use, as many of them contain some dairy products - I don't know offhand which are safe, but you'll need to find a brand suitable for vegans to be sure its ok. I guess a splash of soya milk would do the job if you normally add milk to your recipe, but you may not need any as margarines can sometimes be a bit "wetter" than butter anyway.

I used to make dariy free birthday cakes using one of the uore margarines. You do need to read the ingredients carefully to ensure you choose the completely dairy free one though as it on't just say "milk" as an ingredient. I just used an ordinary recipe that didn't use milk. No one noticed it was dairy free.

Don't use ready made icing without checking though. I did once and then found it had milk in it in some form or other.

You could do worse than posting in the allergies section asking what to look out for. You need to check for things like Lactose and Casein as well as milk but I'm not sure entirely what.

Oh i've spent ages today checking all the 'spreads' to discover that almost all of them have buttermilk or whey powder in. When you don't have to as a matter of course it's a real shock to discover how limited you can be with things. Thanks for the allergies tip i will also try posting there. And Madam Deathstare where could i get hold of your recipe?

Whey, lactose and caseine are... well... other names for milk.

You can also use rice milk.

The pure range is suitable .

I never have a problem using pure and soya milk in any recipe.

I'm sure I used a bog standard Delia sponge recipe for the dairy free birthday cakes I"ve done, simply using a dairy free fat. Nothing special or clever. I added cocoa to make it a chocolate cake.

You can make "butter" cream with the non dairy spread too. Enough icing sugar and a touch of cocoa and no one notices.

I have a dairy-free banana muffin recipe that comes out very well - come to that most muffin recipes can be made with corn oil instead of butter (and I generally do that because it is easier than melting butter) - just remember not to add chocolate chips to anything!
