What do I do with fish?

This is going to sound very silly, but I've not really eaten fish before - I didn't eat it as a child and DH can't stand it - but on a recent holiday I became a convert. When I came home, I mail ordered some fabulous frozen fish, but now have no idea what to do with it... it's just using up space in the freezer!

So, I have cod, salmon and some other fish I've bever heard of, all as largeish fillets and I'd like to cook some meals with them. As DH still detests fish, they need to be things for one person, or that are easily frozen in one-person portions. Any ideas what to cook? I do cook lots of things from scratch, but really a beginner when it comes to fish!

Please help.

Get a fish cookbook - go and browse to see what has the sort of recipes you can cope with.

Or

Stick the fillet under the grill for as little time as possible till the flesh turns white, add knob of butter and screw of black pepper and serve! (works with most white fish)

Or

Fry in very little oil a few mins each side till going white then squeeze lemon over it and butter.

Fish must not be overcooked or it is awful and dry. The flesh should only just turn from translucent to opaque and still be moist.

Salmon I bake with a butter-paper over it - the cold leftovers are lovely with lemon and salad.

i love fish but am a bit scared of cooking it. what i do is make a foil parcel, put in fish, knob of butter, herb (usually dill) splsh of white wine and pop in oven for 30 mins

The Salmon is lovely just done on a griddle with a bit of butter, or in foil with some onion and lemon juice.

You could 'egg and breadcrumb' the cod. Coat in flour, then dip in beaten egg and then coat in (dry) breadcrumbs, then shallow fry (I suppose you could deep fry, but probably less healthy).

Alternatively, use some of each type of fish to make a fish pie with parsley and hard-boiled egg, topped with cheesey mash.
