Ratatouille - suitable alternative to stew for veggie?

I am catering for 14 this weekend, four courses. Doing stew as main but have one veggie guest. I am not doing a whole separate meal for her, so it needs to go with jacket and greens and have no chickpeas in it (doing chickpea starter).

Is a ratatouile suitable? She does not have a big appetite and is fussy but that seems like something most would like AND it goes with jacket nicely .....

Your thoughts much appreciated. Needs to be easy and quick but also tasty in light of numbers I am catering for!

It's OK, but it lacks protein. I'd stick a few beans or lentils in it (butterbeans go well) and/or provide some cheese to grate on top.

It's not easy to make ratatouille just for one person though. And I must admit that I don't like it (another fussy vegetarian!).

How about an individual gratin?

I think it sounds fine - agree a cheesy topping would be nice, but maybe check she likes it first?! (if possible)

Thanks all. purple that is just the type of thing that was trying to find, just that kind of recipe but am away from home with very little by way of recipe books or iPhone signal so thanks for the link! solves the protein problem too.

That looks nice, Purple. I think we must be very greedy in our house though because we'd need around twice as much as that (for 4) and the recipe says it serves 5!

If you like butterbeans, it's worth looking out for Greek recipes for 'baked giant beans' - very nice indeed!

I think it was meant as a side dish to roast pork and baked potatoes, BG. I think I do tend to bump up the quantities a bit as I'm cooking!
