How can i make my own roast beef slices for sandwichs? Can I freeze them?

I have never managed to get leftover meat suitable for sandwiches, maybe i roast it too rare in the centre which doesnt seem nice when defrosted to eat cold.

How do i cook the meat so that it is soft when defrosted, normally i have to reheat in gravy.

Roast for longer at lower temp?

Carve it hot or cold?

I wouldn't freeze sliced meat I don't think, wouldn't it dry out?

TBH I don't freeze much at all, a joint will keep in the fridge for a few days, long enough to make as many leftover meals as you want.

What is the purpose of the freezing of the joints?

Try pot roasting it- in a pot (obviously), lid on, with liquid in (just water would do, makes cracking gravy), at a low temp for a longer time. Keeps the meat really moist.

Well at least if it doesnt work i know itsnt me iyswim

May cut in half and freeze half raw then as dh wont eat beef

I'd often buy a joint of meat, cook it well then slice it (I bought a cheapish meat slicer from argos). Freeze between greaseproof paper.

Make sandwiches with frozen meat in the morning and it is defrosted by lunch time. Used to have a freezer full of sliced beef/pork/ham.
Dh used to take it to work and kids for school lunches. No complaints about dry-ness or taste.

Don't do it at the moment as DH lost his job so kids get free school dinners, but will start again when he gets a job. Worked out a lot cheaper than buying sliced meat, and you know that it is just meat, rather than being "processed and reformed"

I can see the lure of having slices of home roasted meat the the freezer! I'm not that organised - we get a big joint every week and just roast it, then it's used for sandwiches etc for as long as it lasts, then we have something else! It sounds nice to be that organised.
