About 30 mins, but it can be longer if you want. I'm planning to let mine sit for about an hour.

I watched Gordon Ramsay on 4OD this morning and he says to rest it as long as the cooking time. IMO I think that is too long. I have a legless turkey (don't ask!) and plan to rest it for about an hour.

2hrs covered with foil and a few tea towels on top of that.

I rest mine for about an hour or an hour and a half while I cook everything else as I can't fit it all in my oven otherwise. I just cover with a few layers of foil, never thought to use tea towels.

keeps the heat and moisture in. keeping it nice and tender as it continues to steam the meat.

Chef on R2 said a good hour, and he doesn't even cover it!

Kato77 · 24/12/2010 21:49

Am intrigued. Doesn't it go cold if you leave it this long?

LauraNorder · 24/12/2010 21:50

That's my worry too, so does it?

dearprudenceandtheivy · 24/12/2010 22:24

No, doesn't go cold. Although personally, I would cover with foil and a tea towel.

Thanks for this too. Have only ever been brave enough to cook a breast joint (ex did all the cooking really). Today DS1 has brought back what he calls a real turkey, has legs and all, so I'll put the joint I had bought in the freezer. Was thinking 1 hour was a long time to let it stand but seems the thing to do. Happy turkey eating.
