What bit/s of your Christmas meal do you prepare on Christmas Eve?

I've had flu recently and only just back on my feet again. Having Christmas lunch here as ususal (very traditional meal - no suprises here!) and I usually do everything on Christmas Day but would like to make my life easy this year as I feel so knackered! Any suggestions as to what I should prepare on Christmas Eve please?

I usually part boil my potatoes, ready for roasting. Part boil, drain well (making sure the edges are all fluffy) and roll in seasoned flour. You could also prepare any other veg, peel carrots and sprouts etc, just leave in some cold water and they will be fine. Bread sauce can be make in advance too. I'm doing some baking today, tomorrow I'm making Jamie Oliver gravy and the pumpkin bake. The rest I'll do on the day.

Stuffing and the giblet stock I do the night before. Are the potatoes okay - do you store them in the fridge afterwards.

Stuffing, stock, brining the turkey, making the pudding (chocolate one this year) and pre-preping all the veg. Bread and cranberry sauce too. As the gravy doesn't use the meat juices (due to brining) I may make that as well.

Oh yes, dessert. I've already done that, it's the Jamie Oliver Christmas ice cream bombe and that went in the freezer a couple of days ago.

I made the stuffing a while back and froze it - ditto the pigs in blankets, much cheaper to make chipolatas smaller and thin out strips of bacon and DIY. Cranberry compote has been in fridge a few weeks now.

Tomorrow, I am going to make a few sausage rolls and mince pies, make a giblet stock, prepare the turkey ( make a herb butter and put it under the skin ), and prep the carrots and sprouts and keep in fridge in a ziplock bag.

I will do the parsnips and potatoes on the day, doesn't take long. I am also leaving the turkey to rest for at least one and half hours, so this takes a lot of pressure off on the day.
