I ve got the cooking bug and need to change what we eat a bit due to boredom.I love chicken so what can I do with it?
Does anyone have the recipe for shortbread also,I've lost mine?

This was Tigger2's recipe from the What Are You Having for Dinner Tonight thread (July 2002) (can't do links). I made it several times and it was fabulous. In fact, we may have it for dinner tonight. It makes absolutely loads (for 2 adults) so good to make and freeze the extra.

Here is a quick one.

4 Chicken breasts or diced lamb.
1 tin of Chopped Tomatoes
1 tin of Baked beans
4 carrots cut into big chunks
1 onion cut into chunks
2 courgettes cut into big chunks
any left over veggies you might have.
2 cloves of garlic
Season to taste

Cut up chicken breasts, brown in olive oil, put all other ingredients into an oven proof dish or a large pan, mix up and cook in oven for 1 hour or on top of cooker until veggies are tender.

Serve with couscous or rice, a nice way to serve cous cous is with spring onions and and garlic in it.

Lemon chicken. Take a couple of lemons and cut them in half. Score the skin of the chicken and squeeze juice of one lemon over, rub in with salt and pepper. Cut the other one into smaller pieces and put inside the chicken. Baste with olive oil or butter and roast the chicken.

Greek chicken is done with lemon, also crush garlic over, scatter with lots of oregano, plus salt and pepper and roast in olive oil. This also works well with lamb.

A good one my family love:

Chicken breasts ( 3 to 4)
Brocalli florets
tin of campbells chicken or mushroom soup
4 tablesppons of creme fresh ( sp and in hurry!!)
2 tablespoons of mayo
grated cheese and breadcrums to top if require.

1, blanch brocalli (sp!) and mix up with chick breasts cut into strips or chunks.
2, mix together soup, creme fesh, mayo and cover chick and broc.
3. top with grated cheese and breadcrumbs
bake in oven for 50 mins uncovered and serve with pasta or baked potatoe

Here's one I adapted from Lindsay Bareham:

Cut up two onions into half moons/wedges. Put onions in large saute pan or similar with oil. Fry gently (give them a good sprinkling of salt at this stage, it makes the onions sweat a bit), after about 10 minutes add sliced red pepper and some chopped garlic, fry for a bit longer until onions are really soft and caramelised. Turn up the heat a bit, add chunks of chicken (I use 2 breasts for 2 people) and fry until the chicken is no longer pink. Add a good splash of balsamic vinegar (about a couple of tablespoons), fry until vinegar has bubbled away and coloured everything brown. Add in about 1/4-half a cup of stock (I just use a cube) or water - just enough to cover the bottom of the pan but not enough to drown the chicken! Simmer until chicken is cooked (about 10-15 min depending on how big your chunks are). Check seasoning, add pepper if you like it.

Thanks Florence,I love balsamic vinegar so can't wait to try.
Does anyone have a recipe for shortbread though I wanted to make some with the kids tomorrow?Do I need ground rice?

According to my Great Big Cookie Book, Scottish Shortbread

175g/6oz/3/4 cup plain flour
50g/2oz/1/4 cup cornflour
50g/2oz/1/4 cup caster sugar (plus extra for sprinkling)
115g/4oz/1/2 cup unsalted butter, chopped.

Preheat oven to 160c/325 f/GM 3. Line one of those baking trays with a raised edge with greaseproof paper.

Sift flour cornflour & sugar into a bowl. Rub butter into flour until it binds together well enough to knead to a soft dough. Squash it into the tray.

Bake for 35 - 40 mins until pale golden in colour. Sprinkle with caster sugar.

Looking at the quantities, you may want to double toe amount depending on your tray. I wonder if the dough would cut out with cutters too. I seem to remember pricking it witha fork when I made it as a child.

Might make some myself tomorrow!!

Yes I found myself flicking through those the other day in the shop.If I'd found one recipe I liked I would have bought one but I did n't.
Thanks Souperdoup how are you?The kids love shortbread and you can use a cutter with it.My old recipe which I've lost had ground rice in it but I'll try with cornflour.

V disappointed that Domestic Goddess didn't have a shortbread recipe in it. I must go and investigate my other recipe books to see if there's one with ground rice in it.

Delia has a recipe with semolina in it instead of the cornflour and a wholemeal one with ground rice. The semolina version is, apparently, grittier and the ground rice one more crunchy. They also have more butter in (6oz).

Who'd have thought there was so many recipies for shortbread.
Cods I call her souperdoup cos she is like the yellow pages and whenever I need any info she always comes up with the goods.
Sit down now and have a rest,it's making me tired thinking of you flicking through those recipe books.
