what can I make with some shortcrust pastry but very limited options re cake trays etc?

The Dcs and I were about to make mince pies when we realised we had no suitable trays to cook them in (I have a tray suiatble for muffins and a few cake tins but that's it)

We don't waste to waste the shortcrust pastry - any ideas what we can make please? Suitable for fairly inexperienced and unadventurous (that's me, not the DCs) cook.

Either make deep ones in the muffin tin or use a cake tin, line the bottom with pastry and make an open mince tart.

thanks guys. we made the mince pies in the muffin tin. Only time will tell but they look scrummy.

well, 2 went a bit wrong - basically they fell apart when i took them out of the tin but they tasted okay.
Just wondering though, this was ready made shortcrust pastry bought from the supermarket. Do they do two different ones, one for savoury items and one for sweet maybe?

Mix plenty of sugar and flaked almonds (or currants) in with the short crust pastry. Knead. Roll out flat about 0.5 cm thick and cut shapes to make biscuits. Lay on grease proof paper on a tray, brush milk on top and scatter on more sugar. Cook on low heat (350 F Gas 4) for 15 mins until a little bit firm but not hard or browned.

I do it with left over shortcrust after making a pie. Makes nice biscuits.

Shortcrust pastry is so easy to make at home-it's basically 2 parts flour to 1 part butter. You can add a couple of tablespoons of water to make it easier to knead. It's important to not overdo it- knead for a 15-20 seconds max.You can put it in the fridge for a bit so it's easier to roll.
