Well what is it that you actually have?

Is it nice?

I don't buy cabbage at all, ever, but if I did I would follow Delia's suggestions.

Rupreckt · 19/12/2010 14:59

Red cabbage is yummy as long as it is not too sweet and is served with meat as an alternative vegetable.

GentleOtter · 19/12/2010 15:00

red cabbage stewed with apples, cloves, onions and cinnamon and a good slosh of port.

I like it but the others do not.

notapizzaeater · 19/12/2010 15:02

I love it - am making Delias this year but will make it Xmas Eve and reheat on the day. The shop bought M&S version is nice too.

TrillianAstra · 19/12/2010 15:02

Otter yours sounds like mulled wine flavoured veg!

And some acid, like vinegar, to stop it going blue.

TrillianAstra · 19/12/2010 15:03

If it is a sweet thing I think I'll skip it - not keen on apple sauce cranberry sauce or generally sweet fruity things with meat.

It is similar to mulled wine flavours. We quite often have it with roasts in the winter.

Blu · 19/12/2010 15:04

It definitley shouldn't be sweet - more spicy.

GentleOtter · 19/12/2010 15:04
Xmas Grin
tummytickler · 19/12/2010 15:49

I like it cooked slowly with some red wine vinegar and a drop of brown sugar. This is how my chef friend cooks it and it is lovely.

TrillianAstra · 19/12/2010 15:56

Vinegar sounds more like it.

I have some horrid red wine that is quite vinegar-y - is that the same? Xmas Wink

I love it, always make a huge pan full & then freeze it.

Hassledge · 19/12/2010 17:26

Yes, I always use Delia's recipe. It's my favourite bit of the Christmas meal - I love the stuff.

senua · 19/12/2010 17:38

Red cabbage is gorgeous.
I do John Tovey's recipe which comes out all red-wine-y and subtle-spice-flavoured, a bit like red onion marmalade. I do a whole cabbage at a time and freeze it in portions.

Sidge · 19/12/2010 17:50

We love it and German MIL makes us jars of rotkohl which is divine.

If we've run out of hers then Lidl do jars of it too, it's lovely - just heat it up.

TrillianAstra · 19/12/2010 18:16

A bit like red onion marmalade? Well that does sound good...

We're having a goose for the first and only time this year and we've been advised to have red cabbage with it, so we will as we love it anyway.

Normally we have sprouts, carrots, parsnips, spuds, roasted tomatoes. We may well have that lot too this year, dunno yet!

Aunt Bessies red cabbage and apple. Comes in briquettes so its easy. 90seconds in the microwave for one portion (2 briquettes)

senua · 19/12/2010 18:49

This is John Tovey's:

Take a cabbage, shred it (remove any tough bits). Toss and thoroughly coat in 4oz melted butter.
Peel, core, slice 1lb Granny Smiths. Finely chop 8oz onion.

Put a layer of cabbage in a pot that can go on the hob and in the oven. Sprinkle on some apple, onion and orange zest. Repeat until all used. It needs a big pot - I use my 24cm Le Creuset which is about 4 lires.

Liquidise: half pint red wine, 2 tbsp vinegar, 2 tbsp brown sugar, juice of 2 oranges, 2 cloves garlic and spices (qtr tsp each of nutmeg, allspice, cinnamon, thyme, caraway seeds). Pour over cabbage and bring to boil. Then bake in oven for 20 min at Gas 5.

Trill: the apple mushes down to nothing and gets lost in the general spiciness; it is not sweet.
The recipe might sound a bit of a faff but it makes about eight family-sized servings and can be done well in advance.

the delia one - make it the day before

people seem to love or hate it - I think it's yum - and it freezes well

ShanahansRevenge · 19/12/2010 18:57

The words vegetables and briquettes should not be used in the same sentence!
