If you can find/ have a Times subscription - Jill Dupleix's is great or this one is even better. It works out very squidgy and expensive but tastes great. I leave out the coffee as I thought it gave it a bitter hint.

I'm sure I read that buttermilk can be substituted with milk and something from kitchen cupboard if you don't have it. Think I used baking powder instead of the bicarb soda. i.e. the one that already has the powdered acid component.

I make a standard victoria sponge BUT add the same weight of melted plain chocolate

ie

180g sugar
180g butter
180g chocolate
180g plain flour
3 tsp baking powder
3 eggs separated

I add the chocolate to the creamed sugar and butter, and whisk the egg whites and fold them in after the flour.

I sandwich the cake with lemon curd and cover with a chocolate icing made in the proportions

150g plain chocolate
65g butter

Melt the two together, cool slightly and whip until it turns the colour of milk chocolate - I use a mixer. It can then be spread over the cake with a palette knife. Alternatively it can be poured over the cake, but when whipped it gives it a texture a bit like a frosting, and also it's more manageable.
