Can I do anything with the brambles from bramble brandy?

They been soaking in brandy for 3 months. I've just strained it, ready for bottling, and hate throwing them away.

I wondered about adding them to truffles, but think they may be a bit wet for that.I kept the sloes from sloe gin to make truffles with, but when I came to make them, wasn't keen on the texture of the sloes, so I threw them away in the end. Brambles seem like they ought to be more useful.

Any suggestions before they head into the bin?

you were quite right to throw the sloes away, they are really not good to eat

okay

you could whizz the brambles and make them into ice cream - basic vanilla would do, nothing fancy needed here

or again whizzed down, use instead of cherries and kirsch in a gateau/trifle

Like the sound of that. Brandied bramble ripple. Perhaps an alcoholic fruity sauce to go already existing icecream, as the freezer is absolutely stuffed.

I'd seen the sloe truffles recipe here, and was really quite enamoured with the idea, but they had a horribly grainy, mushy texture once removed from the gin. Though to be fair, I did freeze them after removal from gin, until I got around to truffling, so perhaps it was the freezing.
