What to do with 8 (!) egg yolks?

I'm making pavlova for a dinner tomorrow & it involves 8 egg whites. What do I do with the 8 egg yolks? Chuck them in the bin (which feels such a waste) or do something with them? Am about to make the pavlova now so any quick answers much appreciated :)

My concern is that tomorrow I have a big dinner for 6 planned (see my other thread on that: hence making the pavlova for that). Which means that tomorrow I won't have time to make cakes, as I'll be cooking beef wellington & sides etc.

Hence the ice cream / lemon curd idea which should solve the 8 egg yolks problem.

For the whole eggs, I suppose I could make a big big omelette/frittata for lunch (with the 7 eggs) & invite a friend and her toddler to join me & DS?

Creme brulee wouldn't work unless it can keep for a few days, as we have dinner for 6 tomorrow- pavlova planned for that.

Will go do the cling film thing & check on my pavlova. Sigh.

Gary Rhodes' bread and butter pudding uses loads of beaten whole eggs plus loads of extra egg yolks.

Could make a massive amount of whole-egg ice cream. I heart Tessa Kiros' recipes.

Ice cream will be lovely with pavlova :)

If you keep them airtight then the 7 eggs will last at least 2-3 days so don't panic tomorrow if you have a dinner party to get on with. The yolks probably have a marginally shorter useful life but even so you don't have to do it all tomorrow. Have a lovely evening!

Also, I don't have blowtorch for crème brulee (although otherwise it would be perfect as it would use up exactly 8 yolks).

Yeah, often they try to tell you that you can pop it under a hot grill, but that has never worked for me.

You can melt the sugar in a saucepan and pour it on top of the brulees, apparently.

I haven't tried it though.

No, I think safer to make plain vanilla ice cream which I can then store in freezer for whenever it's needed.

And I can add a blowtorch to my (dream) wish list of things for the future Grin.

Zebra, carbonara absolutely delicious yes :). But doesn't use up that many yolks does it? (I've got 8).

in the end I made a custard with my 8 yolks which tomorrow I'll turn into vanilla ice cream. And scrambled eggs for lunch tomorrow for my 7 eggs.

My pavlova turned out delicious, by the way! Gooey inside, as it's supposed to be. Made with (frozen) berries & pomegranate seeds, mmmmmm.... Highly recommend the Cook's companion pavlova recipe which is what I used.
