Is gammon ok cooked in cider?

I did the ham in coke for a few years always went down well. But the last couple I've cooked it in a mixture of cider & apple juice. My family prefer it.

Coke works, as does cherry coke, cranberry juice, cider and quite a few other combinations tried over the years..

I've done the Nigella one with it soaked in cider vinegar and apple juice everybody has loved it so I do it each Christmas now.

cider it is. it tastes good in coke but generally can't bear the stuff so cider all the way!

My MIL does lovely gammon - cooked in water with a tbsp brown sugar and 2 tbsps cider vinegar.

I'd rather drink the actual cider than cook itGrin

Gammon in cider is luvverly. And the stock you're left with makes brill gravy for next time you have roast pork; stick it in the freezer once it's cooled down. Once it's cooled the fat and whatnot will have risen to the top, so it's easy to skim.

I throw half an onion, a stick of celery and whatever random aromotics I have (a few peppercorns, a clove or two stuck into the onion, a bay leaf, I think I might have used the odd juniper berry, but don't quote me on that) to help flavour the stock as the gammon cooks.

Don't need to freeze to skim. Line a sieve with a couple of sheets of kitchen paper and then wet them. The stock passes through, the fat sticks to the paper. Much quicker (dh a chemist).

If you are hesitating because you've never tried I would say go for ham in coke (Nigella recipe) - I agree it sounds a bitHmm, but it tastes heavenly (amd not at all like coke).

Oh, I also used it, instead of the chicken stock in the recipe, to make an approximation of this.

What sort of ginger beer, Flo? Do you use the naice stuff (Fentimans) or the bog standard stuff that comes in two litre bottles?

Bog standard cheap stuff. Then glazed in the oven with mustard, ginger, honey and studded with cloves. Gives a lush crust. Absolutely the best ham I have ever had/done!

Yes, it's lovely.
I always use an old fashioned organic cider(get me!) as it's the first and only one I tried.
Celery,carrots,bayleaf,onion in bottom of slow cooker. Make a sauce afterwards by reducing the cooking liquor and adding butter mixed with plain flour gradually.

My SIL does an amazing gammon cooked in cider, then she slaps apricot jam on it and roasts it - it is GORGEOUS!
