How long would these little pies keep for?

I want to make them Christmas eve to put on the buffett boxing day.

Would they be ok for that long in an air tight container?

The cranberry ones will be fine in an airtight container for a few days.

The cakes will be fine made ahead and airtight container again but I wouldn't ice them until Boxing Day.

The danger in reheating is that they will dry out - esp as they don't have a proper "lid". I'd serve cold I think.

Or......I bet you could freeze them. Cook them straight from frozen for an extra couple of minutes. I do this with mince pies and it works brilliantly.

btw if you freeze them freeze them raw, so you are only cooking them once, iyswim.

With the chestnut chocolate cupcakes (which look gorgeous, by the way: I'm tempted to make them too) it says on the recipe that they can be frozen before decorating. You could then decorate them at the last min.

I have never frozen cakes, but plenty on mn do, particularly fairy cakes for packed lunches, and say they are fine when defrosted...

They both look gorgeous... do you live very far away? I may be free boxing day! Wink
