Absolute rut in feeding toddler: ideas needed!

Hi, I have a DS who is 2.4 & a notoriously fussy eater. Even though DP & I cook every day (we both love cooking) & have a meal plan etc, DS will have none of it & will only eat the following things:
-sausages (including veggie sausages)
-lots of fruit
-cheese
-bagels and/or bread
-yoghurts
-fish fingers
-rice
-meatballs (sometimes)
-potatoes (sometimes, less & less often)
-dessert
-milk/juice/water
-simple omelets (with cheese, NO veg!)

And that's it! It's completely disheartening & I admit I've become so bored / tired of the whole thing that I just give him the same few meals again & again. Which feels wrong, particularly as I love cooking so much!

Any ideas of simple meals that he might perhaps try, and that wouldn't mean I have to slave over separate meals for him everyday (as he won't touch our meals)? Or strategies that have worked for people?

Unfortunately he won't touch pasta in any shape :(. He also won't touch anything with sauce on it (but as the others have said probably that's not unusual with 2 yr olds).

I love the suggestions on this thread & will certainly try some of them out. This afternoon I tried cheddar cheese muffins (dead easy to make, too) & he gobbled them up! So one more thing to add to his repertoire :)

the one thing I'm not prepared to do is to have meals as a family that involve fish fingers etc as the main dish (lovely as fish fingers are): I think that way lies the road to madness Grin. So even though I take the 'we're a family home not restaurant' point, I prefer a table with 2-3 selections, rather than one shared main meal that comes from my DS's restricted repertoire.

For example: yesterday we had on the table: meatballs, bread, pasta with tomato sauce & tuna, boiled carrots. DP & I ate mainly the pasta, DS ate meatballs/bread. Yes, it's not an ideal situation but I think that kind of arrangement suits us for the moment, taking on board also all the suggestions about gradually expanding DS's repertoire.

Fish fingers don't have to be Birdseye! I make them by cutting up a nice piece of salmon and flour egg and semolinaing it, then shallow fry .

Haven't read all the above thread. We are getting there with our fussy DS now 4.5 years.
He was pretty fussy and also stressed at mealtimes. We seem to be cracking it now and he will try new things and this seems to be since he's started school and is having school dinners and we've been having his friends to tea.

Our DS had a problem with sauce, so I'd put it in the middle of the pasta.
We also tried to offer at least something he'd like with other foods so at least there was something he'd like. Food went on the worktop if he didn't eat up and he could go and get it to eat it up.

Younger DD is also a bit fussy but we are leaving her to it. If she doesn't eat anything (happens maybe once a week) we let her have some fruit or a yoghurt.

Hang in there DS made eating and meal planning difficult and unpleasurable for us but it should get easier.
