What do you cook on Boxing day?

Hmm.

We normally have about 25 around for Boxing Day supper. I have done prosciutto wrapped cod and Jamie's turkey and sweet leek pie or his MOF fish pie previously.

Is HFW's Donnie Brasco pork too much after a Christmas meal?

What do you like to eat after a heavy Christmas Day meal?

I've done HFW's Donnie Brasco pork and its very versatile, but it does need 24 hours in the oven, so as soon as your turkey's out, you'll need to put your pork in!

Its great for a crowd as its so easy. You can do it with noodles and make it chilli spicy, or as we did, with apple sauce and baps on a giant platter so people make up their own. They can then have as much or as little as they please.

I never cook on Boxing Day, we just have a quite family day with a couple of friends over, so cold buffet.

I think that's a good idea, baps (are you Midlands-based?) and apple sauce.

That'll keep it very simple for me to concentrate on the puddings.

Puddings? AAargh! Any advice on some crowd pleasing puddings? But simple so I can take it easy-ish? Grin

Lemon cheesecake. I have a James Martin recipe that I think is just mascarpone, lemons, and icing sugar with biscuits, butter and honey for the base. It's just a chilled one. So easy to prepare. Let me know if you want the recipe.

Or banoffee always goes down well with our family. And maybe a big crumble?

I cook fish and then have eton mess because that's just assembling it and very easy.

Lemon Cheesecake

(I usually double this I think and it does a 9inch round tin. This recipe was for 4 individual ones as I recall.)

12 digestive biscuits, crushed
100g butter, melted
1tsp honey

Combine these ingredients and press into case.

2 lemons, zest and juice
1 tbsp icing sugar
500g mascarpone

Stir these ingredients together - not too much or they'll split - and spread on top of base.

(I think he did those little spun sugar decorations on the original, or decorating with raspberries looks nice, or a curl of lemon/lime peel.) It's very fresh tasting and delicious. I'll watch the thread with interest too!

A nice crowd pleasing dessert (serves a lot of people, too) is Nigella's chocolate cherry trifle. I've made it a few years in a row as pudding for Christmas lunch & everyone loves it, but no reason why you can't make it for boxing day. Good thing is, it can be prepared in advance which really helps.

This is a very easy pudding, takes a few mins to make. Plus Christmas cake, mince pies and tin of Quality Street, natch. Plus Stilton, celery, walnuts, crackers etc for those that don't like pud.
