I need a really good shortbread recipe

Making shortbread is something you need a bit of a gift for TBH (I don't have it). Apart from the gift Hmm the most important things are cold hands, a cold work surface and an optimum minimum of handling. It not a great thing to make with DC. If this will be your first attempt I really wouldn't plan for it to be a gift.

Something easy, delicious and childproof like this flapjack type stuff would be much better. Use butter rather than marge.

Ah, my Gran evidently had the gift then. I'm reasonably good at baking but somehow have never made shortbread before.

If you go by the 1-2-3 recipe it'll be lovely. eg multiples of sugar, butter and flour. I use 2oz sugar, 4oz butter (not marg, doesn't work at all for this) and 6oz flour. Use fork for mixing (dc are great at this !) and roll out, cut into shapes.

Second the 1-2-3 recipe, dead easy, tastes lovely and doesn't crumble too easily (so can withstand cookie cutters very well)

Make sure you use proper butter though, obviously :)

I do an old Scottish family recipe from DH's eldery aunties (who live on the Isle of Skye). Their recipe is divine - it's butter, icing sugar, cornflour and plain flour.

I zap it up in the food pro but wouldn't tell them that! It's a doddle to make - do a search on my name and if you can't find it I'll go and find it for you.

For extra crunch you can always replace 1/6 of the flour with semolina or ground rice.

this one is dh's aunts so proper highland shortbread. it's great and cuts into shapes beautifully.

8oz butter
cup icing sugan
cup cornflour
2 cups plain flour

I bung it all in a food processor (though I'm quite sure the aunties would never do that!)

Do you mean American cup measures or tea cups tassis?
