For the love of St Nigel Slater, WHAT can I do with the lettuces I keep getting in the veg box?

Is there anything tasty you can do to lettuce? I have three, in varying states of freshness, in my fridge. Confused

braise with a bit of butter and add a squeeze of lemon to serve. yum.

Rocinante · 08/12/2010 16:26

Never tried it but I've heard Lettuce Soup is nice. I think you can also do a pea and lettuce soup which sounds tastier.

More ideas here.

madwomanintheattic · 08/12/2010 16:29

second the lettuce soup. very yum.

starfishmummy · 08/12/2010 16:32

Third the lettuce soup!!!

Unprune · 08/12/2010 16:32

Oh that does look nice - that blog article is good too.
Thanks

I have done a 'summer soup' with lettuce, spinach watercress and sorrel (though I don't normally have any sorrel).
I'm sure it would taste just as good in freezing December as in July Grin

Unprune · 08/12/2010 16:33

I had never heard of lettuce soup. Shock

Since you were all so helpful: what can I do with multiple kiwi fruits?
And is there a good way to cook broccoli other than steaming it, because ds just looked at me sadly when I said it was broccoli with dinner again.

I wish they would farking vary the veg, the bastards!

Braise with butter and frozen peas and a bit of stock.... I think it's called petit pois a la Parisienne.... Refer to St Nigella

Rocinante · 08/12/2010 16:40

Well, it's completely inauthentic but whenever I make a curry I tip in all our unused vegetables too - DH doesn't really notice a bit of manky broccoli/baby corn/red pepper here or there. Grin

Himalaya · 08/12/2010 16:44

Brocolli - I usually just pour boiling water over it. You can break it up into small pieces and stir fry then add soy sauce etc... Or bigger pieces and roast with cauliflower and cumin seeds

watercress · 08/12/2010 16:48

Add some other fruits to the kiwis (frozen will do), some yogurt and oats, and make a smoothie.

moondog · 08/12/2010 16:49

I put lettuce into noodles. An entire flat leaf collapses into one bowl.
Kiwis? I eat about 8 a day anyway.
Broccoli? Stirgry or steam slihtly and dress in salad.

SantaClausImWorthIt · 08/12/2010 16:50

Broccoli - par boil it for a couple of minutes.

In a wok/frying pan, fry a sliced onion in some sesame oil, with a finely chopped clove or garlic (or 2,3,4 - according to taste), and a finely sliced red pepper.

If you/your DC like it, you can add some red chilli too.

When softened, add the broccoli and stir-fry till tender.

AnnoyingOrange · 08/12/2010 16:51

you can also make broccoli cheese in the same way as cauliflower cheese

or do mixed broccoli and cauliflower cheese

FreeButtonBee · 08/12/2010 17:01

Second broccoli cheese; don't bother with any of that minging cauliflower.

Also Broccoli with a squeeze of lemon juice over it is lovely.

Also v nice steamed with soy sauce over it too.

Broccoli and feta salad nice too. Steam breifly, Chop up some feta, red onion, then dress with lemon juice and olive oil and salt. Finish with some oregano.

Poledra · 08/12/2010 17:02

Do this!! it's a very simple Heston recipe, and it's delicious. Can be improvised by adding flavourings if you like (some chopped garlic along with the butter, or a squeeze of lemon juice at the end) but is great on it's own.

SantaClausImWorthIt · 08/12/2010 18:02

Ooh that sounds nice, Poledra!

Bet you could do that with cauliflower too, with a bit of cumin.

taffetazatyousantaclaus · 08/12/2010 18:19

lettuce

-yy to petit pois a la francaise, here's a recipe, very good with chicken

  • caesar salad

Buy this book. Its brill for veg ideas, simple but tasty.

Unprune · 08/12/2010 18:26

Oooh....
I have Nigel Slater's veg one (good for meat-eaters) and Yottam Ottolenghi. Both are strangely quiet on the subject of lettuce, though Grin

Thanks you lot.

Re lettuce, if there's lots to use up I just use it like greens. Works very well usually.

You can add it to things like

  • stir fries
  • veg soup
  • Chinese/Thai dishes
