Sausage Casserole Recipe?

I need to use some sausages up and usually do toad in the hole, but fancy trying a sausage casserole.

I was thinking of something like this:

sausages
onions
bit of garlic
tinned chopped tomatoes
beef stock (or chicken?)
worcester sauce
thyme/herbs
mushrooms (which also need using)

Does it sound OK? Not sure whether to also add red wine or substitute red wine for the tomatoes?

Or has anyone got a tried and tested recipe please?

It sounds delicious! Thats almost exactly what I do, right down to using some red wine if i happen to have some open.

i would also perhaps add a tin of cannelini or haricot beans at the end of cooking to bulk it out, if I had any.

Sounds great and very similar to a good food one here but I don't do garlic toasts I wash and chop up potatoes into small chunks, chuck olive oil, pepper (or paprika) and garlic over them and bung them in another roasting tin and cook at the same time.

It works well and my DSs demolish it.

I think DH made me something along the lines of this on Monday night:

...mainly so that he could get himself an extra bottle of ale to sup while it simmered methinks, however it was lovely, a very rich & unusual flavour- different to the standard (sweeter) red wine/ cider sausage casseroles. I had mushrooms & potatoes in it instead of peppers which I think gave it a richer, darker taste too. Didn't bother with the fresh herbs either.

I use the delia one but instead of red wine half a can of guiness - gives a proper onion gravy taste and wonderful. So easy and a complete fav. Add a bit of sugar to kill the bitter taste.

Your recipe looks good but you could add some lentils, pearl barley or mini pasta to add some volume, and you should definitely have dumplings on top.

This was a regular dish when I was at uni, classily named 'penis stew'!!
