what do you do with rabbit?

I picked some up in the supermarket as it was reduced, and it's now sitting in the freezer taunting me as I have no idea how to cook it. I've only got 300 g of the stuff (wild rabbit), diced, so I was thinking of braising it in cider, but have no idea if this is a good plan or not.

anyone know what I should do?!

This is what I do with rabbit -

Saute leeks and garlic in olive oil
When soft add rabbit to brown
Cover with red wine and chicken stock. Add 3tbsp lentils per person
Season. I also add a bouquet garni and a bay leaf.
Into oven for 2-2.5 hours
Scoff

You can't go wrong really by covering it with some sort of liquid and putting it into oven for a good 2 hours. It needs long cooking. Cider sounds lovely, you could add some diced bacon to the saute too.

Some kind of stew, HTK's idea sounds nice... And it definitely will go with cider too...

I second adding bacon, smoked or green, it adds depth of flavour and rabbit needs a little fat added. Maybe a little dry sherry and mushrooms. Bay leaf, garlic and herbs that you like. Nice with mash or rice.

Rabbit risotto is also very nice. I chop the rabbit into joints, fry it a bit with some onions, then add water & a bit of bouillon powder & simmer til tender (1 hr maybe?) Then make it into a risotto as you would anything, with some mushroom is good too.

I made a bunny pie last week. Slow cooked in cider as other have said and then mixed in with creme fraiche and tarragon. was very nice.

just wanted to come back and say - I cooked some leek and bacon in butter, then added rabbit which had been rolled in seasoned flour, plus a bottle of cider, and salt and pepper. Slow cooked in the oven for 2 hours, it was delicious with rice - DS (14 months) almost inhaled it! And we have enough left in the freezer for another meal next year :)

Mustard goes well with it too. The one with seeds in it, do your original reciped, add the mustard and some double cream. Even 9.7 DD will eat this, despite knowing that thumper died for her tea.

White wine, shallots, garlic, bay leaf. My mother used to cook it with carrots, onions and pearly barley to make it go even further.
