Can you freeze croissant dough?

In a moment of weakness I agreed to make croissants with the kids. Now we've shoved all the ingredients into the breadmaker, I've realised it will be way past bedtime before they're ready.

Is it possible to freeze the dough, or would that kill the yeast and stop it from rising when I took it out?

you can buy frozen yeast, so i don't see why not.

you could leave the dough to prove and then freeze.

I might try that. Bake half tonight and freeze the other half of dough and then unfreeze the other half in the morning and bake and see what gives the best result.

Sorry, thinking aloud and boring myself with my domestic lack of drama...

They aren't very nice frozen when baked (in my experience) but I could be doing it wrong
