Step by step.... How do I cook my seabass?

I stupidly bought two little whole seabass from the reduced counter. They have heads and everything on them. I want to oven them in foil. Have bought fresh lemon and parsley to go with it. What exactly do I have to do..... Head off etc before I cook them? How long do they need to cook for and at what temp? They weigh 250 g each if that helps!

I've just eaten a trout that I gutted, laid on spinach with some lemon and a good basting of olive oil, salt and ppper before wrapping loosely in foil asnd baking for 30 mins.

Oh yeah, do I get the heads and tails and fins etc off before I cook?

ok. i did it. it worked, but i didn't really like it that much!

we enjoyed, but i don't think i'll be rushing to buy it again. thanks for your help though...and the nigel slater tip was ace!

Next time, buy course sea salt, cover the fish totally and bake. The salt forms a hard crust and it kind of dries the flesh out a bit (I find sea bass a bit slimey, prefer bream)

T'is my fave way of doing fish. You hack th salt crust off before serving, but are left with lovely salty bits still.
