Vegetarian Sunday roast ideas but not nut roast or quorn

Step dd is visiting us next week for sunday lunch. She is a strict vegetarian and hates nut roasts and quorn. Anybody have any helpful suggestions?

Some kind of tart? E.g. butternut squash and goats cheese or mediterranean vegetable or onion? I did this for my Mum recently. Took quite a while but you could simplify it a bit and use ready made pastry.

Yorkshire pud with a bit of cheese and herbs in the batter, plus extra of whatever veg she likes best.

Assuming you are cooking potatoes, veggies and yorkshire puds without any animal fat then she can have those. She could have baked field mushroom filled with soft cheese and herbs, or vegetarian sausages (made with vegetables rather than quorn), some sort of tart either bought or made. If you want to make it buy some frozen puff pastry, cut a square in the centre, but not all the way through to the bottom. Fill the square with some precooked veggies. Roasted peppers or sauted mushrooms with garlic. You could add some cubed goats cheese. Bake in the oven for about 20 minutes. The outside of the pastry will rise leaving the filling in the centre.

you can get a decent frozen soy mince from sainsbury & the likes,

if you toss it in soy sauce, to give it a richer flavour its a good base for most mince recipes, in this instance I'd suggest using it to make a "Meatfree meatloaf" , you can make it go further & up the nutritional value, by adding some precooked green lentils, other than that follow any recipe you like the sound of

we don't eat meat, & though DD generally hates "fake meats" this is one of DDs favourites

I would buy a very big onion, and take the middle out. Stuff it with, erm, stuffing, dab with butter or marg and srpnkle with thyme. Roast for about 30 - 45 minutes - until brown and yummy.

I ink I'll try the butternut squash with goats cheese. Do you think it would be suitable for a starter or would it be too filling?
Or would stuffed mushrooms be better for a starter followedby soy meat loaf with veg for mains?

I would check if she likes soy mince first. Lots of people who don't like quorn don't like soy stuff either.

As a veggie I would be happy with just the veg everyone else has maybe with an extra yorkshire pud and dome cheese sauce.

Thanks for pointing that out ruddy. I will check. I think she would be happy with veg,yorkies and sauce but I don't want her to think we don't care by not making her something special. Dp doesn't see her much.

I think a vegetarian nut Wellington is nice. Pastry, enclosing a mushroom paste and a nut mixture. It goes well with gravy and roast type vegetables. If you think you might want to make it I'll put the recipe on here.

Mushroom and tarragon pithivier really tasty, interesting and actually fairly easy to make. I added chopped chestnuts as well.

Sorry it's taken me a while to get back (was cooking dinner etc) but here it is.

Vegetarian Nut Wellington

Ingredients

12 oz puff pastry (can be shop bought)
1 onion
2 cloves garlic
oil
4 oz walnuts
4 oz cashew nuts
6 oz chestnut puree (you could buy vacuum packed peeled chestnuts and whizz them in a food processor)
1 heaped teaspoon paprika
1 teaspoon oregano
2 tablespons lemon juice
2 eggs
2 oz mushrooms

Preheat the oven to gas mark 7 or equivalent
Fry the onions and garlic in the oil and place in a bowl with the nuts, chestnut puree, paprika, oregano, lemon juice and eggs. Mix well.

Rol out the pastry and line a loaf tin with it. Put the mushrooms in the bottom of the pastry case and add the mixture from the bowl. Fold the sides of the pastry over and seal with beaten egg. Turn out onto a baking tray, and make a few cuts in the top. Bake for 1 hour, turning the oven down halfway through to gas mark 5 or equivalent.

Hello! I'm vegetarian. "Nut Wellington" sounds just as awful as Nut Roast to me! Nuts rarely belong with a roast...

I hate putting people out when they cook for me. I'm always happy with just some normal stuffing (Paxo-style does fine). I'm grateful that people who love me try - but I feel like such a pain - and also almost everything doesn't really quite go with the rest of the meal anyway!

Stuffing-filled onions/yorkshire puddings are amazing.

Saus-mix is very versatile and nothing like Quorn or Soy - can be bought from Julian Graves/Big Sainsburys and keeps for ages. Makes an excellent sausage roll and the like - mixed together with stuffing and wrapped pie style/Wellington style it is beautiful.

I second the idea of tarts as well. I have some lovely recipes for them - Ottolenghi's very full veg tart is gorgeous, and I have numerous Sarah Raven ones I have done to much acclaim, my favourite being a Spinach, Sorrel and Gruyere one.

taffetacat - have you got Plenty by Ottolenghi? Its made a big difference to what I cook - there's loads of interesting flavours and textures.
The pithivier recipe as written makes vast quanities, I halved it for Christmas and it still had 6 decent portions.
